The Ultimate Charcoal Cooker

SweepyI know, I know, we said we'd never go back to charcoal cooking. But our good friends Bill Arnold and Craig Newby wouldn't stop raving about this unique grill / smoker that, they claimed, would change our minds forever. It's BIG, they said, and GREEN, and shaped like an EGG, and it cooks like no charcoal or gas barbecue you've ever seen!

 
 


So we visited the Big Green Egg User Forum online, and were amazed at the almost fanatical loyalty this cooker inspires in its devotees. Finally, we decided we had to try it. We acquired a Large Big Green Egg with wheeled Nest and Egg Mate shelves and started cooking.

First, we cooked steaks. They came out as juicy and flavorful as everyone told us they would.

Then, we tried salmon, using soaked mesquite chunks on top of the charcoal. Cooking salmon on a barbecue can be a challenge, as the difference between done and dried out can happen in less than a minute. Our Big Green Egg® turned out perfectly cooked salmon filets, with a delightfully subtle mesquite flavor.

       

Next, we roasted a leg of lamb. Our drop-in dinner guests, who swore they didn't like lamb, devoured every bite.

Finally, we slow-smoked several racks of pork spareribs for five hours with a handful of moistened hickory chunks sprinkled over the charcoal. The Egg easily maintained smoking temperature for five hours on one load of charcoal, and the ribs were smoked to fall-off-the-bone perfection.

We were sold, and we're sure you will be too.

Dear Mr. Sweep:
We're interested in the Big Green Egg, but are having a hard time visualizing the sizes. They say the small Egg has a 13" grill and the large egg has an 18-1/2" grill, but that doesn't seem like much difference. Can you tell us how many McDonalds hamburger patties would fit on each size grill?
